The inspiration behind this handmade Beef Shin Ragu hails from the northern regions of Italy, Tuscany and Emilia Romagna.
Slow cooked for over six hours in red wine reduction to gently extract the flavours of the rich 100% British Beef. The base Soffritto (carrots, onions and celery) provides the balance of sweetness and sharpness that gives this ragu the homey feeling to be enjoyed over a piping hot bowl of Tagliatelle or Pappardelle.
